Gourmet, Locally Sourced Recipes for the Single Cook

Karen Covey never had to discover the importance of cooking healthy food for one person – until she went through a divorce. Now, Covey shares her recipes and cooking tips through Gourmet Recipes for One, which just launched in June. “Really, it came down to what I wanted to do for my future,” Covey said. “[Food] is the one thing in my life that has brought me consistent happiness.” Growing up in Southern Vermont, Covey spent a lot of time in the kitchen at her parents’ restaurant, which developed her love for food and cooking. With the launch of her own culinary career, Covey now aims to inspire individuals to prepare healthy, locally-sourced meals by making use of leftovers through Gourmet Recipes for One. “The goal behind the site is to teach people to be creative with their food,” Covey said.  “You can make a really [healthy] meal in the same time it takes to get a pizza delivered.” The site is designed to easily search recipes and tips – visitors can even search recipes by typing in one specific ingredient on the website. For instance, if you have eggplant in your fridge that’s a day away from spoiling, you can search for eggplant on Gourmet Recipes for One and make a meal out of it. Covey also provides a comprehensive checklist for staple items single cooks should have in their kitchens. In addition to making cooking more approachable for single cooks, Covey also drives home the appreciation for local, fresh-from-the-farm ingredients. “I’m a big proponent of shopping at the farmer’s market several times a week,” Covey said. Covey points out that one of the biggest advantages of shopping at the farmers’ markets when cooking for one is the ability to buy fresh food in small batches. Instead of purchasing a package of tomatoes at the supermarket that may go uneaten and spoil within a few days, one can buy the exact amount of produce they need at the farmer’s market, resulting in less waste. “I’m not a big proponent of freezing food,” Covey said. “I think it makes a big difference to pick and choose your produce, and [pick] what’s fresh that day.” Moving forward, Covey hopes to expand Gourmet Recipes for One into cookbooks, classes and cooking demos, to continue inspiring single cooks to get in the kitchen and prepare healthy, locally sourced meals.
